I am so happy that I had extra of all of the ingredients I used so I could make another batch of these all for myself. I’m not letting anyone else get their grimy little hands on them because they devoured the first batch in the blink of an eye.
I am such a huge fan of anything lemon and lime, so when I was coming up with a recipe for all of you I knew I had to include these amazing flavors in it. But past that, I couldn’t think of what I wanted to make, so like any skilled chef, I went to my pantry and for some reason we have an abundance of nuts currently. Pistachios. Walnuts. Almonds. Cashews. Someone obviously went a little crazy in the grocery store. When I saw all of these I instantly new what I would make: Citrus Energy balls. Perfect for the sunny spring weather we have been having here.
As always, my food processor was a bit tempermental when it had to grind up the nuts, but in the end it succeded and the process of making these was a breeze. The only real problem I faced was fighting off my family from eating all of the balls before I was able to try any. Both my recipes start with the same base because of the similarity in the flavors of the two fruits, but I added coconut to the lime balls because I always think of lime as being a sweeter, more desserty taste. Honestly, this recipe could not be simpler to make and is a perfect one to make with the kids.
