As soon as I wake up in the morning, I make a warm cup of Yogi ginger tea and usually drink some water before I eat anything. Sometimes I add in chia seeds or different fruit to the water to change it up but sometimes the purest way is the best way. I love doing this because it is such a great way to get my day started and allows me some time to get get some work done before the day gets away from me.
An hour or two later, or once I am ready to get out of bed, I head down to make breakfast. Since it is summer and I have the time I have been obsessed with making smoothie bowls with loads of fun toppings. This morning, I made a banana and strawberry bowl with just a bit of a cacao powder to give it a bit of a chocolatey taste and then I topped it with chia seeds, banana slices, strawberry slices, buckwheat, and chopped up coconut strips from Trader Joes. So good!
Today was a very relaxed day because I didn’t have to go anywhere so I just spent most of the morning outside with my family, enjoying the amazing weather that we were having. After a while, my sister and I got hungry so we headed back inside to make lunch. I have actually had this lunch every day this week but it is so good and simple and can be done so many different ways. All it is is a bowl of lettuce topped with some quinoa, grilled red, orange, and yellow peppers, zucchini, mushrooms, and onions. Eat is a lot of fun to make a ton of the surronding items and let each person make their own bowl.
Later in the afternoon I was kind of hungry so I made a quick snack before dinner. On my last trip to the grocery store I went a little hummus crazy and bought five different kinds of hummus. Not all were great successes, but my favorite, by far, is still the edamame hummus. It is so good! I spread some on top of two rice cakes, added some red peppers, chickpeas, spinach, and sesame seeds and I was good to go. My sister even tried to mooch some of it from me.
Last but not least, dinner. Today was a bit of a mishmash of things. To start, I pan fried up some broccoli and great northern beans with a little bit of avocado oil (my new obsession). I then added a bit of the leftovers of my copycat recipe of Trader Joe’s Multigrain Medley. It has corn, peas, carrots, and a bit of onions minced up, in addition to some barley and wild rice all mixed together. It is one of my absolute favorite things to eat whether it is from Trader Joe’s or made at home. I also had a bit of my Quinoa soup on the side. It is such an amazing combination of Edamame, carrots, kale, tomato and most importantly quinoa! It was such a great meal overall but made me really want to go and take a long nap.
