Over this past weekend, I decided it would be fun to make a different kind of sweet treat for my family that wasn’t one of the usual recipes that I normally create for them. So no cookies, no cupcakes, no bars. I didn’t realize before how many of my go to recipes fall into this category. But then while I was at Trader Joe’s I saw a bag of their cowboy bark and I thought, perfect! I can do that! The only hard part was having to fight off my family so they all wouldn’t devour the bark before I could manage to take the photographs. Little to say this was bark was gone as soon as it hit the table. I think it was a favorite.
Salty and sweet is the ultimate combination for me, and apparently most of my family. It just balances out so well and doesn’t leave me craving anything else after I eat it and this recipe does just that. All you need to make this cowboy bark is:
Semi-Sweet Chocolate Chips
And all of these things can be found right at your local Trader Joe’s, but if you do not have one near by you can easily find these things at your local grocery store. Just convert the Joe-Joe cookies into Oreos and you’re all set to go.
You barely need to even follow a recipe for this bark because it is just that easy and once you have a starting off point you are good to go. A lot of this recipe is up to the individuals who are going to eat it and is super easy to adapt for different groups. If you love almonds and hate pretzels, load up this bark with all the almonds and only add a few pretzels. Or maybe you’re sweet tooth is kicking in, add on loads of Joe-Joe’s cookies! Anyway you work it, this bark will definitely be a family favorite.
- 1-2 bags of semi-sweet chocolate chips
- Melt your chocolate in the microwave, making sure to stir it every 15 seconds and once it reaches a smooth consistency, spread it evenly out on the parchment paper so the chocolate is ¼ -½ inch thick. If you only use one bag of chocolate, your bark should only cover roughly half of the pan, if you wanted a full pan add in another bag.
- Crush up the pretzels and Joe-Joes and chop the almonds before using and then throw on as many or as little toppings as you want.
- Place in the freezer until the chocolate sets (roughly an hour) then break up into small chunks and serve.
